My friend and comedian, Lisa Orkin at #besillynow, put out a request for oatmeal cookie recipes.

Here you go, Lisa!

The Best Oatmeal Cookie (gluten-free)

Blend 1 stick of softened butter with 1 egg.

Add 1 cup of sugar and mix until fluffy.

Add 1 tsp of vanilla extract.

Add 1 cup of gluten-free baking mix. (I like Pamela’s Baking Mix best.)

Add 1 cup of oatmeal.

Form into balls and cook for 10 minutes at 400F.

For extra deliciousness, add 1 cup shredded unsweetened coconut and/or 1 cup chocolate chip cookies.
